if you know me, then you know my favorite part of every cake or cupcake is the frosting! i knew kate was my sweet child when every piece of cake i offered, she just licked the frosting off and left the cake. when i first transitioned to gluten and dairy free, i had a difficult time eating other people’s cakes and cupcakes, because the frosting just wasn’t quite right. i eventually stumbled upon country crock’s plant butter sticks and made an american buttercream and here we are! i honestly believe this is better than normal frosting. i have people that request tubs of this fluffy frosting! I can’t wait for you to make this!

if you’re country crock plant butter isn’t room temperature, pop it in the microwave for 18 seconds! i promise it’s the perfect amount of time. Add the butter and veggie shortening to the stand mixer or a bowl and use a hand mixer. Add salt and vanilla and mix until light and fluffy with no chunks of shortening or butter left.

add powdered sugar and turn that mixer on low or you’re going to have a huge powdery mess! once the powdered sugar is encorporated, turn mixer on high and let it beat for 5-7 minutes. this ensures no clumps and it also keeps the frosting from being grainy.
frost your favorite cake, cupcakes or sandwich cookies and celebrate with your friends and family!

Ingredients
- 2 sticks DF butter room temperature
- 1 cup veggie shortening
- 1/2 tsp salt
- 1 tsp vanilla
- 3 cups powdered sugar
Instructions
- In electric mixer with whisk attachment, cream together butter and veggie shortening until light and fluffy.
- Add salt and vanilla.
- Add powdered sugar one cup at a time.
- Beat on high 3-4 minutes to ensure smooth and fluffy frosting.
