about me
First and foremost, i am a wife, mom and child of god. i am beyond blessed with the husband and sweet girl i have. I can’t believe i get to live this life that i’m living. if you had asked me 10 years ago what i would be doing or what my goals were, none of this would have even crossed my mind. My husband is a huge clemson fan and we spend most of our spare time going to football and basketball games. He’s my number one fan and also my most honest critic. He’s the reason most of these recipes are even here for you. My sweet girl kate is close to being two years old and i feel emotional just thinking about that. she is my ray of sunshine with a dash of sass. She loves baking in the kitchen with mama, but mostly loves licking the spoon. i’m also a physical therapist three days a week and love the change of pace working with my geriatric population, but then coming home and whipping up a few dozen cupcakes.
A few years ago, when my husband and i were about to get married, i decided it was time to figure out my gut issues. I didn’t realize it wasn’t normal to be so constipated and have such bad bloating. I was in physical therapy school on my last clinical rotation when i had a patient tell me to try an elimination diet. Quickly i noticed the difference in my gut health and also my running! I love to run but always thought i was in terrible shape, because i always had terrible stomach cramps. Those went away almost immediately. I quickly learned there weren’t any recipes that were gluten and dairy free that had any sugar and i had to have a sweet treat. I grew up in a home with homemade baked goods and had handed down recipes, so i began to experiment and adventure in the kitchen. Now i’m blessed enough to be able to spend time developing recipes and selling my baked goods!

my philosophy
i do not shy away from sugar in my desserts….if i’m going to eat a piece of cake i want a good piece of cake! This is what kick started my baking journey to begin with! the beauty of gluten free baking is experimenting with flours for increased flavor that you can’t do with normal flour! I love blending flours in for richness or increased fat content and the more you bake with these flours the more comfortable you become with them. It was hard at first to fail in the kitchen, but i quickly learned it was just a learning opportunity to grow and i’m so grateful i had friends and family along the way to try my recipes!
i didn’t start out with super delicious or beautiful cakes, but the more i practiced the better the cakes looked and tasted! Don’t give up after one attempt! Keep trying and they will only get better each bake!
