My husband will tell you i didn’t eat a single vegetable, except potatoes and corn if you count those when he met me…my mom never enjoyed her veggies and i guess i learned to not eat them too. my husband was insistent that every meal had a veggie or a salad and this through me for a loop when we got married. his favorite vegetable was broccoli and i hated the way it even smelled. I learned quickly to start adding veggies to casseroles and really the trick is just to buy fresh veggies and cook them from scratch! They are so much more full of flavor and packed with nutrition! I now enjoy green leafy veggies thanks to this recipe and many others I can’t wait to share with you on this blog.
This recipe is even a crowd pleaser for my sweet toddler! I can hardly get her to eat anything outside of hot dogs and dino nuggets, so this recipe with the rice, cheesy sauce and chicken is such a win! I actually love buying fresh broccoli that you can steam in the bag in the microwave. It saves me so much time, but still has such a good flavor and crunch when baked. If you can tolerate some dairy feel free to swap for real cheese or even find some variations of goat cheeses. I love perusing the cheese section to find cheeses only made from goat milk that have such a good tang. I also love to use country crock Df heavy cream in this for a creamier recipe.

You’ll learn quickly how to make a roux for dairy free/gluten free sauces! It’s so simple and replaces condensed chicken soup in so many of my recipes! Just start with melting the butter then adding garlic and cook until fragrant. Add the GF AP flour or brown rice flour depending on what’s in your pantry! cook the flour for 1-2 minutes then slowly start adding the chicken broth and milk combo! whisk constantly and cook until thickened.
next you’ll finish the sauce by adding the dairy free cream cheese and cheddar! Add nature’s seasoning to taste! This stuff makes every dairy free recipe taste absolutely magical.
Add your steamed broccoli, cooked rice, chicken and sauce to a greased pan and mix it all up! Bake for 25-30 minutes and you’ll have a crowd pleasing veggie packed meal for the fam!

Chicken Broccoli Cheddar Casserole
Ingredients
- 2 cups cooked white or brown rice
- 2 cups cut rotisserie chicken
- 1 bag broccoli frozen and cooked per instructions
- 1/2 stick DF butter
- 2 tbsp GF AP flour
- 1 1/2 tsp nature's seasoning
- 1 tsp minced garlic
- 1 cup chicken broth
- 1 cup oat milk
- 8 oz DF cream cheese
- 1 1/2 cups DF cheddar
Instructions
- Preheat oven to 350 degrees and grease a 9×13 baking dish.
- Place cooked rice, chicken and broccoli in a bowl and set to the side.
- Melt butter in a saucepan over medium heat.
- Add garlic and cook until fragrant.
- Add nature's seasoning and GF AP flour and cook for 2 minutes.
- Combine broth and milk then slowly pour into saucepan while constantly whisking. Cook until roux begins to thicken.
- Add cream cheese and whisk until well combined.
- Add cheddar.
- Pour cheddar roux into rice, chicken and broccoli and stir until combined.
- Bake in 9×13 dish for 25-30 min.
- Enjoy with your family!
