Chicken Broccoli Cheddar Casserole

Your favorite soup turned into a casserole! This is definitely one of Kate's favorite dinners and an easy way to sneak some veggies in for those picky eaters!

Ingredients
  

  • 2 cups cooked white or brown rice
  • 2 cups cut rotisserie chicken
  • 1 bag broccoli frozen and cooked per instructions
  • 1/2 stick DF butter
  • 2 tbsp GF AP flour
  • 1 1/2 tsp nature's seasoning
  • 1 tsp minced garlic
  • 1 cup chicken broth
  • 1 cup oat milk
  • 8 oz DF cream cheese
  • 1 1/2 cups DF cheddar

Instructions
 

  • Preheat oven to 350 degrees and grease a 9x13 baking dish.
  • Place cooked rice, chicken and broccoli in a bowl and set to the side.
  • Melt butter in a saucepan over medium heat.
  • Add garlic and cook until fragrant.
  • Add nature's seasoning and GF AP flour and cook for 2 minutes.
  • Combine broth and milk then slowly pour into saucepan while constantly whisking. Cook until roux begins to thicken.
  • Add cream cheese and whisk until well combined.
  • Add cheddar.
  • Pour cheddar roux into rice, chicken and broccoli and stir until combined.
  • Bake in 9x13 dish for 25-30 min.
